Another one of my standby 30 minute dinner idea is Sweet and sour chicken. I add pretty much any vegetable that I have around, but broccoli and red pepper are really nice choices. I always stir-fry the chicken that has been seasoned with salt and pepper and dredged in cornstarch to get that crunchy. crispy taste. Then stir-fry the veggies, add the set aside chicken (or tofu, with same treatment) and mix all together with the sauce. The sauce is the usual combination of soy sauce, vinegar, sesame oil, vinegar and sugar, but I tend to vary the sauce with the addition of black bean sauce, oyster sauce, siracha sauce and even ketchup. Healthier than the take-out (especially with the brown rice), but satisfies that fried food cravings that I must succumb to occasionally.
